The pumpkin cappellacci are the symbolic dish of Ferrara's cuisine. A declaration of love for one of the great products of this land: the pumpkin, which according to the historical recipes of Ferrara is also used as an accompaniment to meat and not only as a filling or side dish. The first written recipe for pumpkin cappellacci dates back to 1584 and is by Giovanni Battista Rossetti, cook of the court of Alfonso II d'Este, who publishes it in his work "Dello Scalco". Since then the recipe has changed radically. First in the filling, in pure Renaissance style, there were also ginger and cinnamon and then with the passage of time the cappellacci have become a popular recipe: today only nutmeg remains as a spice in memory of that aristocratic past.

Puff pastry 48%: soft WHEAT flour type "00" (Origin: Italy), pasteurized fresh EGGS 27% (Origin: Italy), durum WHEAT semolina (Origin: Italy). Filling 52%: Pumpkin puree 60%, Grana Padano DOP (MILK, salt, rennet, preservative: lysozyme from EGG), breadcrumbs (soft WHEAT flour type "00", brewer's yeast, salt), sugar, salt, nutmeg. May contain SOY and CELERY.
wheat, eggs, milk. May contain soy and celery.
To be consumed after cooking. Cook in plenty of boiling water for 3-4 minutes and season to taste.
After opening consume within 24 hours.
